Tasting Notes:
Full ruby red color verging on garnet red after the ageing process. Has a strong and persistent scent of ripe red fruit, plum, cherry, marasca and almond. Full-bodied, intense and elegant, it clearly reminds us of our olfactory sensations, exalting the essences of vanilla, coffee and chocolate.
Blend: 70 % Corvina and Corvinone Veronese vine: 20 % Rondinella 10 % Sangiovese Croatina and Oseleta.
Winemaking
The best grapes are hand-selected and hand-harvested at the end of September. harvest: The grapes are naturally desiccated in wooden crates until January/February.
Separation of the grapes from the grape-stalks and soft wine-pressing. The fermentation, which lasts about 30 days, is permitted thanks to daily wine- pressing and pumpings of the must over grape skins.
Pairing
This amarone combines wonderfully with game dishes, grilled meats, roasts and aged cheeses. Tasted alone, it is an incomparable "meditation" wine.
Our Vineyards
The Vineyard of ” Monte Faustino” is the first family vineyard. It is situated in Monte Faustino a small area in the municipal district of San Pietro in Cariano with an altitude of 250 m. The grandfather Giuseppe Fornaser had been cultivating this area since the 1920s. It is the pride of the business because of the extraordinary longevity of the terrain, which was planted with vines by the grandfather of the Fornasers.
Here the family tradition is reflected in the age-long interaction between plant and soil: the result is the particular fine flavour of graphite that characterizes its grapes. The porous yellowish limestone soil offers the plant some peculiar mineral nuances, which the oenologist appreciates, ascribing a unmistakable typical-ness to the wine. The porousness of this limestone soil maintains the ideal measure of water in order to permit the cultivation of the vine, which reaches and transmits the mineral essence of the land to the grapes. The old vineyard, with a bigger structure of the roots, better absorbs the water and the minerals, giving the grapes a quality that is inaccessible for a younger plant.
In Amarone Monte Faustino, the note of graphite kept in the soil of the ancient vineyard of the same name is especially valued. The hilly terrain from which the best grapes are selected for the main wine of Valpolicella and the highly developed root system of grandfather Fornaser's old vineyard, combined with the long drying and prolonged aging in barrique and bottle, give this Amarone a otherwise unattainable value. Deep garnet red, persistent aroma of ripe red fruit, cherry, plum and almond, full and elegant flavor with notes of vanilla, coffee and chocolate. It combines wonderfully with game dishes, grilled meats, roasts and aged cheeses. Tasted alone, it is an incomparable "meditation" wine.
Monte Faustino wines are said to have a graphite note. It has a dark garnet-red color. Already in the fragrance it gives off an intense aroma of ripe red fruits, along with cherries, plums and almonds. On the palate it is very concentrated, but also quite elegant for such a wine type, in the very long finish it shows a perfect balance and notes of vanilla, coffee and cocoa.
Serve this top wine with game, grilled dishes, braised meat and aged hard cheese, but it is also a real meditation wine as a soloist.
