Castello di Bossi Chianti Classico 2021
Deep, ruby-red in color, this Chianti Classico offers aromas of ripe cherries and red plums, with subtle notes of toasted vanilla beans and purple flowers. On the palate, the wine displays a superbly structured character with bright acidity and a pleasantly savory finish.
Nose: Cherry and strawberry notes shine bright, accompanied by ripe notes of plum. Floral notes add complexity. Secondary notes of black pepper and clove emerge after aeration.
Herbs: Notes of sage and rosemary can enrich the bouquet.
Palate: The fruity sensations from the nose carry over to the palate, balanced by bright acidity. The tannins are present but well-integrated, providing structure and persistence.
Finish: Lingering: The flavors and sensations persist on the palate for a significant time.
Pairing
Pasta with tomato sauce and sausage: The acidity in the wine cuts through the richness of the tomato sauce, while the sausage adds a savory, meaty flavor that complements the wine's tannins.
Pasta with mushrooms and truffle: The earthy flavors of the mushrooms and truffle are enhanced by the wine's acidity, creating a harmonious pairing.

History
Castello di Bossi is a winery and agriturismo located in the heart of the Chianti Classico region. Founded in 1984 by Marco Bacci and continued today by his family. Their mission has always been to create high quality wines and experiences that represent the tradition and culture of the Tuscan land.
Castello di Bossi covers an area of more than 800 hectares, 130 of which are planted with vines. Here you can immerse yourself in the beauty of the landscape and the thousand-year history of our castle. Its first tower dates back as far as 1099: an extraordinary testimony to its antiquity, but that is not all: traces of vineyards from Roman times have been found in the area. In 1450, the castle was transformed into a four-sided defensive shape, which still dominates the surrounding landscape today. Within the property there are also two consecrated and recently renovated churches.
Here, love for the land translates into a special care for the environment. We are proud to say that our farm is 100% organic and is totally powered by clean energy, with 600 hectares of solar panels naturally cleaned by local sheep. We are keen to share our passion with those who wish to have a unique experience in the heart of Tuscany.
